I am new to photo taking and was wondering how people get fantastic colors in their pictures like these pics?

Several things:
- Learn to work within your 'dynamic range'...we have about 7-8 stops of light (digital or film, it makes little difference). If you expose for the bright portion in your subject, your shadows will not be defined. If you expose for the shadows, your bright portions will be 'blown out'...also not defined. Either shoot early or late in the day where there is not a great span between darkness and light...in other words, avoid high contrast. The filtered light that comes at the beginning or at the end of the day has a dramatic effect on whatever subject it is 'painting'...wait for it. Or, you can use graduated neutral density filters. When you work within your range, you will get better color saturation. It is very difficult to take a picture of a white wedding dress and a black tuxedo without something giving (losing detail in either the dress or the tuxedo)...this represents an extreme span of dynamic range that film/digital cannot cover...most likely, the black tuxedo will become greyish if you meter for a white dress. Also, if you spot meter on the white dress, it will be grey if you do not do any exposure compensation...but that's another subject.

- If you are using a digital camera with a histogram, learn how to use the histogram. Then, learn how to favor your historgram 'to the right'...this is the richest portion of the curve with regards to low noise. See article link below.

- Add a little saturation when doing the RAW conversion or in Photoshop.
